Executive Chef Brenda Lisiotti, inspired by centuries of culinary tradition, reimagines signature dishes from the Mediterranean’s most diverse regions - from Italy, Greece and Turkey, to Egypt, Spain, Morocco, France and beyond. Each dish tells a story, taking inspiration from centuries of culinary adventures, while showcasing the finest local produce from Son Bunyola’s estate gardens and beyond.
At the heart of it all lies a tribute to olive oil - the soul of the Mediterranean diet and a timeless symbol of the region’s culture. Echoing the restaurant’s origins as an ancient olive press, each dish is infused with this liquid gold, connecting past and present in every bite.
